DOUBLE CHOCOLATE CHIP COOKIES

What You Need —
1 stick unsalted butter (1/2 cup softened)
3/4 cup light brown sugar
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
1 cup all purpose flour
1 teaspoon baking soda
1/8 teaspoon salt
1 tablespoon instant coffee granules
1/3 cup unsweetened cocoa powder
1 cup semi sweet chocolate chips
Equipment: two mixing bowls, whisk & spatula or hand mixer, baking sheet, parchment paper
What You Do —
Pre-heat oven to 350°F.
Mix together flour, baking soda, salt, coffee, and cocoa powder. Set aside.
Using a whisk or hand mixer cream together butter, brown and white sugars until fluffy, about 2 – 3 minutes.
Add in vanilla and egg and stir to combine.
Add dry mixture to the wet, in thirds, mixing gently but throughly after each addition.
Stir in chocolate chips.
Using a tablespoon, portion out dough onto a parchment lined baking sheet. Leaving space for cookies to spread.
Bake for 8 – 9 minutes. Cookies will still look very soft.
Remove from oven and let cool on baking rack for 4 – 5 minutes.
Carefully remove and let cookies finish cooling on baking rack.
Cookies will be soft and fudge-like.
