DOUBLE CHOCOLATE CHIP COOKIES

What You Need —

1 stick unsalted butter (1/2 cup softened)

3/4 cup light brown sugar

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 large egg

1 cup all purpose flour

1 teaspoon baking soda

1/8 teaspoon salt

1 tablespoon instant coffee granules

1/3 cup unsweetened cocoa powder

1 cup semi sweet chocolate chips

Equipment: two mixing bowls, whisk & spatula or hand mixer, baking sheet, parchment paper

What You Do —

  1. Pre-heat oven to 350°F.

  2. Mix together flour, baking soda, salt, coffee, and cocoa powder. Set aside.

  3. Using a whisk or hand mixer cream together butter, brown and white sugars until fluffy, about 2 – 3 minutes.

  4. Add in vanilla and egg and stir to combine.

  5. Add dry mixture to the wet, in thirds, mixing gently but throughly after each addition.

  6. Stir in chocolate chips.

  7. Using a tablespoon, portion out dough onto a parchment lined baking sheet. Leaving space for cookies to spread.

  8. Bake for 8 – 9 minutes. Cookies will still look very soft.

  9. Remove from oven and let cool on baking rack for 4 – 5 minutes.

  10. Carefully remove and let cookies finish cooling on baking rack.

  11. Cookies will be soft and fudge-like.

  12. Enjoy!
