Fried Chicken

Marinated in a spiced buttermilk mixture and fried to golden perfection, this fried chicken is tender on the inside and crunchy on the outside. Whether you prefer dark or white meat, this recipe is sure to satisfy your cravings for classic comfort food.
What You Need —
4 chicken thighs (or if you prefer white meat, 2 chicken breasts, cut in half with the thicker side pounded out a bit, to be more even)
2 cups buttermilk
2 tablespoons all-purpose chicken seasoning (or your favorite seasoning blend)
A few dashes of hot sauce, Cayenne
1 – 2 teaspoons salt
3 cups self-rising flour (or 3 cups of all-purpose flour with 4 and 1/2 teaspoons of baking powder and 3/4 teaspoon of salt)
Oil for frying (plan on doing a shallow fry)
What You Do —
Marinate chicken pieces in buttermilk, chicken seasoning, salt & hot sauce. More is more when it comes to seasoning here.
Let marinate at room temperature for up to 4 hours, or in the fridge overnight.
Heat oil to 375ºF. Prepare the flour. You can add salt, but I would not recommend adding much seasoning if you are new to frying, because it can burn.
Dip chicken pieces in flour and carefully drop into oil.
Fry until golden brown. If pieces are thicker, you can finish in the oven on a baking rack until temperature reads 165ºF.
