HOMEMADE PASTA & LEMON VINAIGRETTE

What You Need — For the Homemade Pasta
2 and 1/2 cups flour
3 eggs
1 tablespoon olive oil
Equipment: mixing bowl, rolling pin or pasta machine, plastic wrap, pot to boil pasta
What You Need — For the Lemon Vinaigrette
1/4 cup lemon juice
1 tablespoon dijon mustard
1 garlic clove
1 tablespoon honey
3/4 cup olive oil
Equipment: mixing bowl, whisk
What You Do — For the Homemade Pasta
Mix salt and flour together in a bowl. Create a well.
Crack eggs in the well, and add olive oil.
Carefully mix egg mixture into flour until shaggy dough forms.
Once dough comes together in a ball, turn out onto clean surface and knead for 7 – 10 minutes.
If dough seems too dry, add water 1/2 tablespoon at a time.
Cover dough and let rest for at least 30 minutes at room temperature, or overnight in the fridge.
Shape pasta and cook for 3 – 4 minutes in salted boiling water.
Immediately toss with sauce from water.
What You Do — For the Lemon Vinaigrette
Combine lemon juice, chopped garlic, and dijon mustard in a medium sized bowl.
Stir to combine and season with salt and pepper.
Slowly stream in olive oil while stirring constantly, making sure to create the emulsification.
Taste and adjust seasoning if needed.
