SAUSAGE & PEPPER PASTA

What You Need — 

3 – 4 Ben’s half smoke sausage

2 peppers of any color

1 box Bowtie Pasta

1 onion

3 cloves of garlic

1/2 cup white wine

2 cups chicken broth

1/4 cup butter

3 scallions

2 tablespoons tomato paste

1/2 cup feta or parmesan

1 lemon

What You Do — 

  1. Brown half smoke sausages in about 1 teaspoon of olive oil. Remove from pan.

  2. Sauté onion and garlic over medium heat, stirring occasionally for 4 – 5 minutes. They should have light color and smell fragrant.

  3. Cook pasta according to directions. Strain and toss with olive oil and salt.

  4. Add in peppers and cook for 1 – 2 minutes more.

  5. Add in tomato paste and toast for 2 – 3 minutes until fragrant. This brings out a lot more flavor.

  6. Add in white wine and let reduce until about half.

  7. Stir in chicken stock and let simmer for 6 – 7 minutes until slightly reduced.

  8. Turn off heat and stir in cold butter, stirring constantly!

  9. Stir in cheese, half smokes, and pasta.

  10. Season to taste with lemon zest or juice, salt, pepper, and hot chili flakes.

  11. Garnish with scallions.
