What You Need —
1 cup julienned carrots
1 inch piece of ginger, minced
1 clove garlic, minced
1/2 cup chives, cut into 3 inch pieces
1 tablespoon honey
1 tablespoon soy sauce
1 tablespoon fish sauce
2 teaspoons sesame oil
1/2 cup fresh basil leaves, torn
1 cup mint leaves
1/4 cup cilantro leaves
2 Cups Watermelon rind, green part removed and julienned
What You Do —
Mix together ginger, honey, soy sauce, and fish sauce. Set aside.
Saute carrots and watermelon rind over high heat for 1–2 minutes in sesame oil.
Reduce heat and let cook 1–2 minutes more until slightly soft.
Add chives and stir to combine.
Add in ginger mixture.
Transfer to serving dish and toss with fresh herbs.
