Apple Gallete

What You Need —
1 and 1/2 cups all-purpose flour
1/3 cup powdered sugar
1/4 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, cold
1 large egg yolk
2 teaspoons heavy cream
1/2 teaspoon vanilla extract
4 apples
1 tablespoon honey
1 teaspoon lemon juice
1/2 teaspoon cinnamon
1/2 teaspoon vanilla

What You Do —
Combine flour, powdered sugar, and salt in a bowl.
Add in grated of smaller chopped butter into flour. Use your fingers to incorporate butter into flour until it clumps together a bit.
Add in egg yolk and 1 tablespoon cream. Stir with a fork to get into a ball. If dough seems too dry, add in more cream little by little. If dough gets too wet, dust with a bit more flour.
Do not overwork dough. Once it comes together in a ball, wrap in plastic and place in fridge for at least 30 minutes.
Preheat oven to 375°F.
If desired, peel apples. Slice very thinly and combine with lemon, honey, cinnamon, and vanilla.
Remove dough from fridge and roll between two layers of plastic wrap until about 1/4 of an inch.
Use plastic wrap to place dough on parchment lined baking sheet.
Place apples in center of tart, leaving 1/2 inch edge around. Do not add extra juice.
Wrap edge around the apples.
Brush pastry with egg wash or cream.
Place in oven for 30 – 40 minutes depending on the size of your tart.
