Arugula & Citrus Salad

Brighten your meal with this refreshing Arugula and Citrus Salad. The peppery arugula pairs beautifully with the sweet and tangy flavors of grapefruit, Meyer lemon, and orange. Drizzled with a simple yet delicious honey mustard vinaigrette, this salad is a perfect starter or side dish that adds a burst of freshness and color to any table. What You Need —

2 – 3 cups arugula

1 grapefruit

1 Meyer lemon

1 orange

1 tablespoon mustard

1 tablespoon honey

3/4 cup good-quality olive oil

What You Do —

  1. Stir together 1/4 cup of Meyer lemon juice, honey, and mustard.

  2. Season with salt and pepper.

  3. Slowly drizzle in olive oil, stirring constantly to create the emulsification.

  4. Taste for seasoning again.

  5. Segment citrus.

  6. Place arugula in bowl, and season with salt and pepper.

  7. Toss arugula with citrus and 1 tablespoon dressing per serving.
