Enjoy the classic flavors of a Caesar Salad with this easy-to-follow recipe. Featuring crisp romaine lettuce, homemade croutons, and a rich, tangy dressing made from scratch, this salad is perfect as a side dish or a light meal. The addition of anchovies and Parmesan cheese adds depth and authenticity to this beloved dish. Chefleen Says: Egg yolk and anchovies can be omitted, but it will not be a true Ceasar.
What You Need — For the Salad
Romaine lettuce
1/3 cup fresh lemon juice
2 cloves garlic, minced
2 anchovies, minced
1 egg yolk
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
3/4 cup olive oil
1/4 cup fresh finely grated Parmesan cheese
What You Need — For the Croutons
Baguette, cut into 1/2 inch cubes
1 tablespoon water
1 tablespoon garlic powder
1 teaspoon salt
1/4 cup olive oil
What You Do — For the Dressing
Combine the garlic and lemon juice in a medium-sized bowl and let sit for 3 to 5 minutes.
Add in the anchovies, mustard, Worcestershire sauce, and egg yolk. Stir to combine.
Super slowly add in the olive oil while whisking the entire time until the mixture is emulsified.
Add in 1/4 cup fresh Parmesan cheese and season with salt and pepper.
What You Do — For the Croutons
Carefully squish the water, salt, and garlic powder into the bread cubes.
Place the olive oil and bread into a cold skillet.
Bring the skillet to medium heat and turn the bread around to ensure it gets crunchy and golden brown on all sides.
Place the croutons on a paper towel to remove excess grease and, if desired, sprinkle with cheese.
What You Do — To Assemble
Toss the romaine lettuce with the croutons, dressing, and more Parmesan cheese.
Serve immediately.
