Korean BBQ

What You Need —

  • 1/2 teaspoon cayenne pepper

  • 2 tablespoons smoked paprika

  • 2 tablespoons onion powder

  • 2 tablespoons garlic powder

  • 1 teaspoon dried ginger

  • 1/2 cup brown sugar

  • 1 cup pear juice or Coca Cola

  • 1/2 cup soy sauce

  • 1-2 tablespoons gochujang (fermented chili paste), to taste

  • 4 boneless skinless chicken thighs

  • 1 pound 1/4 inch cross-cut beef short rib

  • Salt and pepper

What You Do —

  1. Mix together the cayenne pepper, paprika, onion powder, garlic powder, and dried ginger.

  2. Whisk in the pear juice or Coca Cola, soy sauce, brown sugar, and gochujang until well combined.

  3. Separate the mixture into two bowls and pour over the chicken and beef evenly. Let marinate for 30 minutes or overnight. The longer it marinates, the more flavorful and tender the meat will be.

  4. Heat a griddle until super hot and sear the chicken first for about 2 minutes on each side to get a nice color.

  5. Place the chicken on a lined sheet tray and finish cooking in a 400°F oven for about 20 minutes or until it reaches 165°F.

  6. While the chicken is cooking, finish the sides and cook the beef. The red meat should take only about 2 to 3 minutes on each side for medium well.
