What You Need — For the Cupcakes

  • 1 and 1/3 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/2 cup butter, softened

  • 1 cup granulated sugar

  • 2 large eggs, room temperature

  • 1 teaspoon pure vanilla extract

  • 1/2 cup whole milk

What You Need — For the Frosting

  • 1 cup softened butter

  • 2 cups powdered sugar

  • 1 teaspoon vanilla extract

  • Optional: food coloring, sprinkles, Ziploc bag or piping bag

What You Need — Equipment

  • Mixing bowls (x2)

  • Cupcake tin

  • Hand mixer or whisk and spatula

What You Do —

  1. Preheat your oven to 350°F and line a cupcake tin with paper liners.

  2. In a bowl, mix together the flour, salt, and baking powder. Set aside.

  3. In another bowl, cream the butter and sugar until it looks like wet sand.

  4. Add in one egg at a time, mixing after each addition.

  5. Mix together the milk and vanilla extract.

  6. Combine the dry ingredients with the butter and sugar mixture alternately with the milk. Mix only until just combined.

  7. Pour the batter 3/4 way into the cupcake tins.

  8. Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.

  9. While the cupcakes are baking, make the frosting. Mix the butter to ensure it is completely softened.

  10. Add the powdered sugar little by little until the full amount is added. Season with vanilla or other flavorings.

  11. Use food coloring to create desired colors.

  12. When the cupcakes are cooled, decorate as desired with the frosting.
