Pasta Primavera & Yogurt Parfait

What You Need — For the Pasta Primavera
1 lb of protein of your choice (shrimp, chicken, fish)
1 tablespoon each of garlic powder, onion powder
1/2 tablespoon each of oregano, thyme, rosemary
1 lemon
1 lb of pasta of your choice or zucchini noodles or half and half
1/2 red onion, sliced
2 cloves of garlic, slice or minced
2 medium heads of broccoli
Cherry tomatoes, cut in half
1/4 cup good quality olive oil
Low sodium cheese to top (optional)
What You Need — For the Yogurt Parfait
Plain Yogurt
Vanilla
Assorted Fruits
Shredded coconut or granola
What You Do — For the Pasta Primavera
Combine all the spices to make your own salt free spice mix. This will keep for weeks in your cabinet.
Marinate your protein in about 1 tablespoon of spice mix and 1 tablespoon of olive oil.
Bring a pot of water to a boil for your pasta. Blanch broccoli in water before adding pasta.
Prepare your pasta according to directions on package and reserve 1 cup of pasta water.
Sear protein on high heat for 2 – 3 minutes on each side to get color. Remove from pan.
Sauté garlic and onion on low heat until soft and fragrant for about 5 – 7 minutes, stirring often.
Add in protein, pasta or zucchini noodles, cherry tomatoes and pasta water.
Low simmer until protein is cooked through.
Season with lemon zest and juice, pepper, and more olive oil. If desired, add low sodium cheese on top.
What You Do — For the Yogurt Parfait
Mix together 1 teaspoon vanilla to 1 cup of yogurt.
Macerate fruit with a touch of honey.
Using a FANCY glass, layer yogurt and fruit. Top with shredded coconut or granola for texture.
