Peach Cobbler French Toast

What You Need — For the French Toast

  • 4 eggs

  • 1 cup milk

  • 2 teaspoons vanilla

  • 8 – 10 pieces of brioche or challah

What You Need — For the Crumble Topping

  • 1 cup flour

  • 1/2 stick butter, softened

  • 1/2 cup brown sugar

  • 1 and 1/2 teaspoons total of cinnamon, nutmeg, allspice (you can use all or just one)

  • Pinch of salt

What You Need — For the Peach Topping

  • 2 – 3 cups peaches

  • 2 tablespoons brown sugar

  • 1 teaspoon lemon juice

  • Pinch of salt

  • 1/4 cup water (optional)

What You Do —

  1. Preheat the oven to 375°F.

  2. For the crumble topping, combine the softened butter and all other crumble ingredients in a bowl. Stir together until crumbly; it should not look super cohesive.

  3. Drop random pieces of the crumble onto a lined or greased baking sheet.

  4. Place the crumble in the oven for 10 – 12 minutes until fragrant. Remove and stir to ensure even heat distribution.

  5. Cook for another 5 – 7 minutes until the crumble is slightly crunchy. It will get more crunchy as it cools.

  6. In a saucepan, combine all ingredients for the peaches. Cook on low to medium heat until the peaches are warm and the liquid is slightly thick, probably 10 – 12 minutes. Add water only if needed.

  7. For the french toast, in a shallow mixing bowl, combine all ingredients except the bread. Stir to combine.

  8. Heat a non-stick skillet to medium. Dip slices of bread in the egg mixture only when ready to cook.

  9. Place the dipped bread into the skillet and cook for 2 – 3 minutes on each side.

  10. Plate the French toast with the peach topping and crumble topping. Enjoy your delightful Peach Cobbler French Toast.
