Raspberry Chipotle Sauce

What You Need —
1 shallot
2 garlic cloves
2 teaspoons chipotle chilis
2 pints raspberries (fresh, rinsed)
1/2 cup raspberry vinegar
3/4 cup granulated sugar
1/2 teaspoon salt
What You Do —
Sauté minced shallot and garlic in small sauce pan.
Add in chipotle (use desired amount according to your spice level taste) and stir over medium heat for 30 seconds to intensify the flavor.
Stir in raspberries, raspberry vinegar, sugar, and salt.
Let simmer for 10 – 12 minutes until slightly reduced.
If desired, strain with a fine mesh sieve.
Store extra sauce in fridge for up to two weeks.
