Creamy Mashed Cauliflower

What You Need —
2 packs of riced cauliflower, 16 ounces each
1/2 onion
2 cloves garlic
3 tablespoons butter or margarine
1/4 cup parmesan cheese (optional)
What You Do —
Sauté chopped onion and garlic with 1 and 1/2 tablespoons of butter, until fragrant.
Add in cauliflower and sauté until cauliflower becomes wilted.
Add in 2 cups of water and boil until cauliflower is soft. Use 1 cup if using frozen cauliflower.
Reserve 1/2 cup of boiling liquid and drain out the rest, making sure to press most of the liquid out of the cauliflower.
Use a potato masher, immersion blender, or blender to blend cauliflower together. Use reserved liquid as needed.
Add in remaining 1 and 1/2 tablespoons of butter, and cheese if desired. Season to taste and serve.
