Collard Green Wraps

What You Need —

Collard greens

Cucumber, julienned

Carrots, julienned

Sprouts, arugula, or mircogreens

Hummus (use your favorite kind)

Avocado

What You Do —

  1. Blanch collard greens in salted water by placing in boiling water for 30 seconds and removing.

  2. Dry and cool throughly.

  3. Chop all vegetables into julienne and arrange nearby.

  4. Lay collard greens flat, with the greener side down, and cut out thick steam.

  5. Spread about 1 tablespoon of hummus on the leaf.

  6. Layer veggies in center on collard green.

  7. Roll up folding in sides as you roll, similarly to a burrito.

  8. Serve with vinaigrette or dipping sauce.

  9. Save extra rolls for up to three days in Tupperware on paper towels.
