Creamed Spinach

What You Need —
20 ounces fresh spinach
3 tablespoons butter
1/2 medium yellow onion, minced
2 cloves garlic, minced
1/2 cups milk
1/4 cups heavy cream
4 ounce cream cheese
Salt/pepper
Cayenne pepper
1/4 cup freshly grated Parmesan
For non dairy option: nutritional yeast, flour, non-dairy milk and butter
What You Do —
Blanch spinach in salted water for about 30 seconds.
Immediately run under cold water to stop cooking process. Squeeze out any remaining water.
Sauté onion and garlic with butter until fragrant.
Melt cream cheese into milk and heavy cream.
Add in spinach and parmesan cheese. Season to taste with salt, pepper, and cayenne.
