Crazy for Crepes

What You Need —
2 eggs
1 and 1/4 cup milk
1 cup flour
1/2 teaspoon salt
1 tablespoon melted butter, plus more
1 tablespoon sugar (if making sweet only)
What You Do —
Melt and cool butter. Whisk together eggs and milk.
Combine flour, salt, and sugar if using is a mixing bowl.
Stir everything together, cover and let rest for at least 30 minutes, or up to 3 days.
To cook crepes, use a non-stick pan over medium heat. Butter generously, and add in 1/3 cup of crepe batter.
As soon as you are done pouring, swirl the pan until crepe batter is nice and thin.
Cook 2 – 3 minutes per side until lightly golden.
