What You Need —

  • 3 cups all-purpose flour

  • 1 teaspoon salt

  • 1 tablespoon olive oil

  • 4 large eggs

  • 1/2 cup ricotta cheese

  • 1 box (1/2 cup) frozen spinach

  • 1/4 cup Parmesan cheese

  • 1 teaspoon lemon pepper seasoning

  • 1 teaspoon garlic powder

  • 1 lemon

What You Do —

  1. Mix the salt and flour together in a bowl and create a well in the center.

  2. Crack the eggs into the well and add the olive oil.

  3. Carefully mix the egg mixture into the flour until a shaggy dough forms.

  4. Once the dough comes together in a ball, turn it out onto a clean surface and knead for 7 to 10 minutes. If the dough seems too dry, add water 1/2 tablespoon at a time.

  5. Let the dough rest for at least 30 minutes, covered.

  6. Meanwhile, mix the ricotta, Parmesan, lemon pepper, garlic powder, and dried spinach together. Season to taste.

  7. Brown the butter in a pan.

  8. Roll out the dough and fill with the ricotta mixture to form ravioli.

  9. Cook the ravioli in salted simmering water for 6 to 8 minutes.

  10. Toss the cooked ravioli in the brown butter and season to taste.
