What You Need —
3 cups all-purpose flour
1 teaspoon salt
1 tablespoon olive oil
4 large eggs
1/2 cup ricotta cheese
1 box (1/2 cup) frozen spinach
1/4 cup Parmesan cheese
1 teaspoon lemon pepper seasoning
1 teaspoon garlic powder
1 lemon
What You Do —
Mix the salt and flour together in a bowl and create a well in the center.
Crack the eggs into the well and add the olive oil.
Carefully mix the egg mixture into the flour until a shaggy dough forms.
Once the dough comes together in a ball, turn it out onto a clean surface and knead for 7 to 10 minutes. If the dough seems too dry, add water 1/2 tablespoon at a time.
Let the dough rest for at least 30 minutes, covered.
Meanwhile, mix the ricotta, Parmesan, lemon pepper, garlic powder, and dried spinach together. Season to taste.
Brown the butter in a pan.
Roll out the dough and fill with the ricotta mixture to form ravioli.
Cook the ravioli in salted simmering water for 6 to 8 minutes.
Toss the cooked ravioli in the brown butter and season to taste.
