Sesame Spinach & Spicy Dikon

What You Need — For the Spinach
2 garlic cloves
1 box of fresh spinach
Sesame seeds
2 tablespoons sesame seed oil (toasted is best)
Salt and pepper to taste
What You Need — For the Spicy Radish or Cucumber
1 daikon radish, peeled, shaved, or sliced (or cucumber, sliced)
Gochujang (fermented chili paste)
1 teaspoon fish sauce
1/4 cup rice vinegar
Juice of 1/2 lime
What You Do — For the Spinach
Slice the garlic into thin slices.
Gently heat the garlic slices in 2 tablespoons of sesame seed oil until fragrant, about 1 – 2 minutes.
Blanch the spinach and wring out the water.
Toss the spinach with the sesame seed oil and 1 tablespoon of sesame seeds. Season with salt and pepper.
Serve hot, cold, or warm.
What You Do — For the Spicy Radish or Cucumber
Combine the rice vinegar, lime juice, and fish sauce.
Add gochujang to taste.
Place the radish or cucumber slices inside and season to taste. The longer they sit, the more they will pickle.
